Dry the leaves
Clinging wash water dilutes the dressing. Drain thoroughly after washing.
The salad is prepared entirely cold. The pear keeps its skin and the dressing is added just before eating.
Why this recipe works
Chicory brings bitter leaves and pear adds gentle sweetness. Gouda and yogurt complete the salad. This makes two light vegetarian main servings including rye bread.
Recipe
Crisp chicory, fresh pear and Gouda cubes in yogurt and lemon dressing, with rye bread.
Wash chicory, drain well and halve lengthways. Cut out the firm stalk sparingly in a wedge. Cut leaves crossways into broad pieces and weigh the trimmed amount.
Wash and core the pear and slice thinly with its skin. Remove the Gouda rind and cut the cheese into small cubes.
Stir yogurt, oil, lemon juice, salt and pepper until smooth. Gently mix chicory, pear and Gouda with all the dressing immediately before serving.
Divide salad between two bowls and serve with all the rye bread. Eat immediately. This makes two light vegetarian main servings with the bread included in the calculation.
