Fine red cabbage and tender potato cubes with lemon, topped with a fully cooked fried egg.

Ingredients

2 servings

Method

  1. 1

    Pre-boil the potatoes

Dice potatoes into about 1.5 cm cubes. Bring to the boil with 1000 ml water and 1 g salt, then gently cook until tender for about 12 to 15 minutes. Check with a knife and cook longer if needed. Drain thoroughly.

  2. 2

    Soften the cabbage

Meanwhile wash cabbage and cut into very fine strips; chop onion. Heat 10 g oil in a large pan. Soften onion for about 2 minutes, then add cabbage, remaining 100 ml water, remaining 2 g salt and pepper. Cover and gently cook for about 10 to 12 minutes until tender; add water and cook longer if needed.

  3. 3

    Add potatoes

Add drained potatoes to cabbage and heat fully uncovered for about 5 to 8 minutes, turning gently and lightly frying. Remove from the heat and stir in lemon juice.

  4. 4

    Fry eggs and serve

Alongside the last pan stage, heat remaining 10 g oil in another non-stick pan. Crack in eggs and fry covered over medium-low heat for about 6 to 8 minutes until whites and yolks are fully firm. Extend if needed. Divide vegetables between two plates and top each with an egg.
