Why this recipe works

Root vegetables and potatoes from the oven

Even cubes and space on the tray help them cook uniformly. Quark, milk and parsley make the cold accompaniment. This makes two vegetarian main portions.

Roasted celeriac and potato cubes with cool parsley quark and lemon.

Ingredients

2 servings

Method

  1. 1

    Prepare

Preheat oven to 200 °C conventional heat. Dice celeriac and potatoes about 2 cm. Mix with oil, 2 g salt and half the pepper.

  2. 2

    Roast

Spread in one layer on a large lined tray. Roast on the middle shelf about 30 to 35 minutes until tender, turning after about 20 minutes. Cook longer if needed; a knife must enter the thickest pieces easily.

  3. 3

    Mix quark

Meanwhile finely chop parsley. Mix quark, milk, lemon, the remaining 1 g salt and remaining pepper until smooth. Fold in parsley and refrigerate until serving.

  4. 4

    Serve

Divide hot vegetables among plates and add all the herb quark. Serve immediately as two vegetarian main portions without additional sides.
