Why this recipe works

Broccoli and chestnuts in one pot

This autumn soup also uses the peeled broccoli stalks. Precooked chestnuts keep preparation simple and give the blended soup body. A small portion is reserved for the topping. The quantities make three light meals; additional sides are not included.

Recipe

Broccoli and chestnut soup

Broccoli and precooked chestnuts make a smooth vegan soup with few ingredients and a small chestnut topping.

Ingredients

3 servings

Method

  1. 1

    Prepare vegetables

Divide broccoli into small florets and thinly slice the peeled stalk. Chop onion and garlic. Reserve 30 g of the chestnuts for the topping and roughly chop them.

  2. 2

    Toast chestnuts and cook onion

Lightly toast the chopped chestnuts in a large dry saucepan over medium heat for 2 minutes, then remove. Heat oil in the same pan and cook onion for 3 minutes. Briefly cook garlic with it.

  3. 3

    Simmer soup

Add broccoli, remaining chestnuts, water and salt. Bring to a boil, cover and simmer over low heat for about 12 minutes until the stalk pieces are also tender.

  4. 4

    Blend and serve

Remove the pan from the heat and carefully blend until smooth. Stir in lemon juice and pepper. Add a little water if needed and briefly heat again. Divide between bowls and scatter over the reserved chestnuts.
