Recipe
Air fryer raisin bread pudding with cinnamon. Stale white bread soaks up egg and milk before baking in a shallow buttered dish until the centre sets.
Butter the whole dish. Cut bread into cubes about 2 cm. Keep crusts but cut very hard large pieces smaller. Use a heatproof dish suitable for the appliance, leaving space around it for airflow. Do not preheat with loose paper.
Whisk egg, milk, sugar and cinnamon. Mix in bread and raisins and soak about 10 minutes, turning once. Spread evenly without packing tightly. Press raisins lightly into bread.
If required by the manufacturer, preheat for 3 minutes at 160 °C. Bake about 25 minutes at 160 °C. Top should be lightly golden and egg milk set through the centre. No raw liquid should slosh when moved. Extend if needed. Check that the thickest part reaches at least 70 °C for 2 minutes; continue cooking if needed.
Cool in dish about 10 minutes and spoon into portions. Inside remains softer than cake. Cool leftovers promptly and refrigerate covered.
