What matters
A deep dish greatly increases cooking time. Browned cheese does not prove that the lower potato layers are tender.
Make air fryer potato gratin with thin slices, milk, cream and cheese. A shallow dish and a knife test help ensure tender layers.
Why this recipe works
The raw potatoes cook in the milk and cream mixture. Use a dish about 18 × 14 cm and keep the layer no deeper than 4 cm. This makes two side portions, not a complete main meal.
Recipe
Make air fryer potato gratin with thin slices, milk, cream and cheese. A shallow dish and a knife test help ensure tender layers.
Butter the dish. Cut the potatoes into 2 mm slices and do not rinse afterwards; their starch helps thicken the liquid.
Mix milk, cream, garlic, salt and pepper. Arrange the potatoes loosely in layers and pour the mixture evenly over them. Use a heatproof dish suitable for the appliance, leaving space around it for airflow. Do not preheat with loose paper.
If required by the manufacturer, preheat for 3 minutes at 160 °C. Cook at 160 °C for about 30 minutes. Pierce to the bottom with a knife; the slices should be almost tender. If still firm, cook longer before adding cheese.
Grate and scatter over the cheese, then brown for about 7 minutes at 180 °C. Serve only when the potatoes are fully tender and the sauce is hot and creamy.
