Use instant, not regular polenta
Slowly cooking corn semolina can take much more time and fluid. Select an instant polenta with about five minutes cooking time for the specified values.
From instant polenta, water and butter, a firm, sliceable polenta is produced. Only after cooling are small slices cut for the air fryer.
Why this recipe works
Fresh hot corn porridge cannot be placed in the basket as free pieces. In a shallow dish and with sufficient cooling time it becomes stable. Use finely ground, precooked instant polenta with a short cooking time stated on the packet. The amount is eight small pieces as two side dishes; an additional sauce is not included.
Recipe
Precooked corn polenta is cold solid and then roasted in oiled pieces. Inside it remains soft, outside solid golden edges emerge.
Boil water with salt in a pot. Pour in the instant polenta while stirring and cook for about 5 minutes or to a thick porridge according to the package. Stir in butter and pepper.
A 16 x 16 cm shallow dish with 2 g oil grease. Spread polenta about 1.5 to 2 cm thick. Allow to evaporate for about 10 minutes and then leave to set in the refrigerator for at least 60 minutes; do not leave to stay warm for hours.
Release the firm slab of polenta and cut into eight rectangles of approximately the same size. Apply thinly with the remaining 10 g of oil. Preheat for 3 minutes to 190 °C if necessary. All pieces must lie in one position at some distance; otherwise the time will be extended by further batches.
Cook pieces for about 18 minutes at 190 °C, rotate carefully with a wide spatula after 10 minutes. The outside should be firm and golden yellow, the middle hot and soft. Serve four pieces each as a side dish.

Too early lifting can tear the soft surface apart. Support the pieces with a wide spatula, not press them together with pointed tongs.
