What matters
Exposed raisins can darken before cookie centres are done.
Air fryer oatmeal raisin cookies with butter and egg. Bake small flat cookies in two batches and let them cool to firm before lifting and serving.
Why this recipe works
Twelve small cookies make six snack servings. Preparation includes 10 minutes resting dough and 10 minutes cooling. Oats and raisins remain visible; these are soft oat cookies, not wafer-thin crisp chips.
Recipe
Air fryer oatmeal raisin cookies with butter and egg. Bake small flat cookies in two batches and let them cool to firm before lifting and serving.
Cream butter with sugar and briefly beat in egg. Stir in flour and oats. Roughly chop very large raisins and fold in.
Rest about 10 minutes. Shape twelve equal mounds and flatten to about 1 cm on a suitable closed baking insert. Press protruding raisins into dough and leave gaps. Use a heatproof dish suitable for the appliance, leaving space around it for airflow. Do not preheat with loose paper.
If required by the manufacturer, preheat for 3 minutes at 160 °C. Bake two batches of six about 12 minutes each at 160 °C. Watch the second batch, which may colour sooner. Centres must cook even though warm cookies remain soft. Check that the thickest part reaches at least 70 °C for 2 minutes; continue cooking if needed.
Let firm briefly on insert, then move carefully to a rack. Cool about 10 minutes in total. Count two cookies per serving.
