Slice the onion very thinly
Thick raw onion rings remain firm in the short baking time. Thin strips are better distributed on the small flat.
A simple dough without yeast is rolled out very thinly. The small flatbreads fit into the basket individually and are sparingly used so that the base does not remain moist.
Why this recipe works
For the air fryer, small flats are more handy than a large base hanging over the edge of the basket. Two pieces of about 16 by 20 cm are baked individually; the entire time of both batches is taken into account. Before baking, check that the dough middle is on the basket insert and does not hang through very large gaps. There are two small meals without salad.
Recipe
Two thin oval flatbreads are baked one after the other with crème fraîche, bacon and onion. A short pre-baking stabilizes the underside.
Knead 145 g flour with water, oil and salt to a smooth dough. Covered, let rest for 15 minutes. Use the remaining 5 g flour for very thin rolling out of two small ovals. Mix cream with pepper, cut bacon and onion very finely.
Preheat for 3 minutes to 190 °C if necessary. Carefully place an untopped flatbread on the suitable basket insert and bake for about 3 minutes at 190 °C. The dough should be stable, but not hard yet. Do not use loose paper in the airflow.
Spread the prebaked base thinly with half of the cream, with half of the bacon and onion each. Bake for about 9 minutes at 190 °C. The base must be baked through, the bacon heated and the onion soft; if necessary extend.
Bake the second base for 3 minutes, then fill with the remaining ingredients and bake for about 9 minutes. Don't put it on the hot basket. Serve both flatbreads right after their passage.
Kitchen know-how
Thick raw onion rings remain firm in the short baking time. Thin strips are better distributed on the small flat.
A browned edge does not automatically mean a fully cooked centre. At the end, carefully lift the flatbread and bake a little longer if necessary.
