Ingredients

Method

  1. 1

    Prepare

Mix starch and sugar with a little cold milk. Heat remaining milk with zest, stir in starch mixture and bring briefly to the boil while stirring, heating about 3 minutes total. Cool completely in a shallow bowl at least 30 minutes.

  2. 2

    Mix and season

Cut pastry into four rectangles about 12 × 14 cm. Divide cold custard on one half of each, leaving edges clear. Fold and seal edges with a fork. Make shallow top slits and brush with weighed egg.

  3. 3

    Cook

If required by the manufacturer, preheat for 3 minutes at 170 °C. Bake two batches of two pockets, spaced on a suitable shallow tray, about 15 minutes each at 170 °C. Side pastry layers must be baked through too. Use a heatproof dish suitable for the appliance, leaving space around it for airflow. Do not preheat with loose paper.

  4. 4

    Check and serve

Lift out with a spatula. Pastry must be flaky, not raw and sticky inside; custard hot throughout. Take care cutting, as filling can be much hotter than the surface. Check that the thickest part reaches at least 70 °C for 2 minutes; continue cooking if needed.

Frequently asked questions

FAQ about Air fryer custard puff pastry pockets

No, only the custard filling is egg-free. The outside is brushed with beaten egg.

Hot custard melts pastry fat early and makes edges difficult to seal.

Not equivalently; filling must be firm when cold so it does not run out while folding.

Filling on edges or internal pressure disrupts seams. Clean edges and shallow steam slits help.
