Weigh the egg precisely
25 g of scrambled egg are about half an egg of size M. A whole egg would make the small dough much softer.
Eight small cookies are baked with space between them on a matching flat baking plate. Chilling limits spreading, while the short cooling phase stabilizes the freshly baked biscuits.
Why this recipe works
The dough is divided into eight equal portions and cooled for thirty minutes. Four pieces per pass need enough space, as the cookies become wider when baking. A suitable flat baking plate or shape is necessary, which is permitted by the manufacturer of the equipment; a coarse open rack is unsuitable for soft cookie dough. Eight pieces give four snack portions with two cookies each.
Recipe
A chilled butter dough with dark chocolate pieces is baked in two batches. The center remains delicate, but must not be raw.
Mix 48 g of soft butter with sugar creamy. Stir in the weighed egg. Mix the flour, baking powder and salt and add briefly, then add chocolate. Don't try the raw egg and flour dough.
Form eight equal portions of dough, press slightly flat and cool in the refrigerator for 30 minutes. A matching flat baking plate with the remaining 2 g butter thinly grease. It must fit into the basket and release the intended airway.
Preheat for 3 minutes to 160 °C if necessary. Bake four cold portions of dough with sufficient distance on the plate for about 10 minutes at 160 °C. Keep the remaining portions chilled and bake for 10 minutes. In case of wet raw dough in the center extend; do not confuse melted chocolate with raw dough.
Allow cookies to cool on the plate for about 10 minutes per batch, then carefully place them on a wire rack. The edges should be firm and the center completely baked, but still delicate. The total time takes into account cooling and the last cooling phase.
