Why this recipe works
Brownies should not be completely dry when taken out: they cook in the hot baking pan for a few minutes. This recipe is calculated for a square or round metal baking pan, which is about 18 cm in size. A smaller baking pan produces a higher dough and requires extra time.
Recipe
Bake chocolate air fryer brownies in a small metal shape with damp centre and thin crust when dough height and baking time match.
A approximately 18 cm large, matching metal shape grease and lay out the base with a matchingly cut piece of baking paper.
Melt the dark chocolate and butter over a bain-marie or in short bursts in the microwave. Stir until smooth and leave to cool for 5 minutes.
Mix the eggs, sugar and vanilla vigorously for 2 minutes with a whisk of snow without hitting the mixture very airy.
Stir in chocolate butter. Sieve flour, cocoa and salt over and add only briefly. Add walnuts as desired.
Mix the dough into the mould. Preheat air fryer to 160 °C and use the mould so that air can pass by on the side.
Bake brownies for 16 to 20 minutes. A stick in the middle should come out with damp crumbs, but without liquid dough.
Remove baking pan and leave to rest for at least 15 minutes. Then lift out of baking pan and cut into nine pieces completely cooled.
