Use very fresh mince
Keep the mixture cool until moulded and prepare on the intended consumption day. The rest phase takes place in the fridge, not on the countertop.
The elongated mince rolls are cooked in a single layer and turned in between. This recipe only uses beef and does not use baking powder or soda.
Why this recipe works
Eight pieces, about 7 cm long and 2 cm thick, can be cooked reliably. The mince is kneaded with the spices briefly vigorously until it binds easily, and then cooled. Cevapcici have different meat mixtures and seasonings depending on the region; here a simple beef version for two portions is described. Bread, ajvar and onion side dishes are not included.
Recipe
Small beef mince rolls are formed without egg and crumbs. Garlic, peppers and a cold rest phase give the mixture flavour and structure.
Knead minced meat with garlic, cold water, paprika powder, salt and pepper for about 2 minutes until the mixture sticks together slightly. Do not taste the raw mince mixture.
Covered, leave to rest in the refrigerator for 30 minutes. With moistened hands, form eight equal rolls of about 7 cm length and 2 cm thickness. Spread thinly on the outside with the weighed oil.
If required by the manufacturer, preheat for 3 minutes to 180 °C. Place rolls side by side and cook for about 14 minutes at 180 °C. After 7 minutes, turn carefully; leaked fat must not smoke on the heating element.
The thickest rolls must reach at least 70 °C in the core for 2 minutes. If necessary, cook longer. Place four pieces on each of two plates; add bread or other side dishes separately.
Kitchen know-how
Keep the mixture cool until moulded and prepare on the intended consumption day. The rest phase takes place in the fridge, not on the countertop.
Uniform cylinders cook more evenly than pieces with wide middle and thin tips. Length and thickness are more important than a perfect surface.
Variations
Values are estimates per serving and may vary depending on the ingredients, brands, portion size and preparation method used.
