What matters
Thick pork belly cooks differently from thin bacon and can remain chewy outside.
Bacon-wrapped pork tenderloin from the air fryer, seasoned with mustard and thyme. Includes a core temperature check and resting time.
Why this recipe works
Use a small tenderloin about 18 cm long and 4 cm thick. Bacon protects the surface but cannot replace a doneness check. This makes two meat portions without sides.

Remove silverskin with a sharp knife. Pat the tenderloin dry and tuck any very thin ends underneath.
Mix mustard, oil, thyme, salt and pepper and spread over the pork. Wrap with overlapping bacon, seam side down.
If required by the manufacturer, preheat for 3 minutes at 180 °C. Cook in the basket for about 22 minutes at 180 °C, turning carefully after 11 minutes. Measure the pork centre, not just bacon colour. Check that the thickest part reaches at least 70 °C for 2 minutes; continue cooking if needed.
Rest on a clean board for 5 minutes, then slice across the grain. This rest is included in preparation time.
