Check potatoes before adding sauerkraut
Acidity can slow potatoes becoming tender. Add sauerkraut only once the cubes are fully tender.
Potatoes cook in water first until tender. Sauerkraut, beans and apple follow later; mustard and parsley round out the stew.
Why this recipe works
Sauerkraut, potatoes and white beans form the base of a warm meal. Apple adds a mild fruity note. Cooking in stages accounts for the effect of acidity on potatoes becoming tender. Precooked beans keep preparation suitable for everyday cooking.
Recipe
Sauerkraut, white beans and potatoes combine with apple in a mildly fruity vegan autumn stew.
Cut potatoes into cubes about 2 cm. Finely dice apple, chop onion and parsley. Shorten long sauerkraut strands if needed.
Heat oil in a large saucepan. Cook onion over medium heat for 3 minutes. Add potatoes, water and salt, bring to a boil, cover and simmer over low heat for about 15 minutes. Potatoes must already be tender when pierced before the next step; cook longer if needed.
Gently stir in sauerkraut, apple and beans. Simmer over low heat for another 8 minutes until apple is tender and everything is hot. Stir occasionally and add a little water if needed.
Stir in mustard and pepper. Divide between deep plates, sprinkle with parsley and serve hot immediately. The stew should retain a little broth between the solid ingredients.
