Deterrent Beans
Coldly deterred beans remain green and bite-resistant.
This Salade Niçoise recipe combines crisp vegetables, boiled eggs, tuna, olives, anchovies and herbs. Potatoes are possible depending on the variety, but the ingredients are not mixed heavily.
Why this recipe works
Salade Niçoise should remain fresh and clear. Beans are only blanched to bite, eggs are boiled waxy or hard and the dressing is used sparingly. The ingredients are prepared, not stirred into a heavy salad.
