Pad See Ew means fried in soy sauce. This popular Thai pasta dish lives on broad, soft rice noodles, crisp Chinese broccoli and lightly caramelized areas. Fresh Sen Yai are delicate: They are not cooked or stirred for long, but carefully separated and turned in portions in a very hot wok. A small bowl of chilli vinegar at the table adds acidity to the otherwise deliberately sweet and salty seasoning.

Pad see ew

Pad See Ew combines broad rice noodles, tender pork, egg and crisp gai lan with a dark, shiny, sweet-salty soy sauce.

    Marinate meat briefly

    Mix the pork with a tablespoon of light soy sauce and a teaspoon of sugar and leave to marinate for 15 minutes.

    Carefully separate the noodles

    Dissolve warm rice noodles into individual sections with lightly oiled hands. Steam firm, cold noodle blocks for 20 seconds instead of pulling them apart by force.

    Mix sauce and chilli vinegar

    Mix oyster sauce, soy sauce, fish sauce, black soy sauce and sugar. Mix the chilli peppers with rice vinegar and serve separately.

    Roast meat and gai lan stems

    Heat the wok very high. Add two tablespoons of oil, fry the pork for 2 minutes and remove. Fry the gai lan stems for 1 minute, let the leaves fall apart only briefly and also remove.

    Roast first portion of noodles

    Put half of the garlic, pasta, meat and vegetables in the hot wok with a tablespoon of oil. Roast as undisturbed as possible for one minute, then carefully turn.

    Add egg and sauce

    Beat two eggs in a free space and let them rise coarsely. Let half of the sauce soak in the stir fry and turn everything only until the noodles shine and show some dark roasting spots.

    Second portion roast

    Wipe out the wok and prepare the second half in the same way. Sprinkle the pad See Ew with white pepper and add the chilli vinegar to the table.

Tips for Pad see ew

Do not cook fresh noodles

Fresh sen yai are already cooked. Water makes them soft and brittle; they just need to be separated and heated completely in the wok.

Fry two portions each

The small amount keeps the wok hot and gives the noodles room for roasted flavours. Four servings at once would produce mainly steam.

Variations

How to adapt this recipe

Replace pork with equally thinly sliced chicken thigh fillet and marinate briefly with soy sauce.

Soak 400 g of dried rice noodles just al dente and drain very well. They will be less soft and wide than fresh Sen Yai.

Frequently asked questions

FAQ about Pad see ew

Sen Yai are fresh, wide rice noodle tracks. They are sold chilled, are already cooked and resemble Cantonese Ho Fun noodles.

They were too cold, separated by force or stirred for too long. Bring to room temperature and turn gently in the wok only a few times.

Thai black soy sauce provides colour and light sweetness. Chinese dark soy sauce is saltier and should therefore be dosed more sparingly.

Pak Choi gives off more water and remains less crisp. Broccolini is a better substitute when Chinese broccoli is not available.

Pad See Ew is mild, sweet and salty. A little spicy vinegar sets a fresh counterpole at the table without moistening the noodles during frying.
