    Mix flour, dashi or water and eggs to a loose dough. Do not stir too long.

    Fold in the cabbage, spring onions and optional tenkasu.

    Heat oil, add batter in portions and shape flat. Optionally, arrange pork belly or tofu.

Cabbage

The dough is only to bind the cabbage. Too much dough makes Okonomiyaki heavy.
