Soba not oil
Oil would prevent the dressing from sticking to the noodles. Cold rinsing and thorough dripping are sufficient for gluing.
For this noodle salad, soba is thoroughly rinsed cold after cooking. Tahin, sesame oil, soy sauce, lime and chilli produce a dressing that is smooth stirred with noodle water.
Why this recipe works
Soba release a lot of starch and stick together quickly without cold rinsing. Wash them under running water after draining until they are completely cold. The dressing may initially have a slightly liquid effect, because the noodles absorb moisture when pulling and bind the sesame more strongly.
Recipe
Cool soba noodles, cucumber and carrot meet a creamy sesame dressing with soy sauce and rice vinegar. The salad tastes fresh, nutty and slightly spicy.
Halve cucumber lengthwise, remove watery seeds with a spoon and cut into thin crescents. Cut carrots into fine pencils, spring onions into rings.
Cook noodles according to the package, usually for 5 to 6 minutes. Remove 80 ml of cooking water before draining.
Place Soba in a sieve and move thoroughly with your hands under cold water until they are cold and no longer feel strong. Drain very well.
Mix tahin, soy sauce, rice vinegar, lime juice, sesame oil, honey and chilli. Add gradually 4 to 6 tablespoons of cooking water until the dressing flows creamy.
Mix the pasta and vegetables with the dressing. Let them rest for ten minutes, season again and serve with spring onions and roasted sesame.
