Tips for Labskaus with fried egg

Evaporate potatoes well

Watery potatoes dilute the rennet mouse. After draining, let dry briefly in a hot pot and then mash with corned beef and broth.

Gradually add beetroot

First, work in only a part of the finely diced beetroot. Colour, sweetness and acidity can be controlled before adding the rest.

Maintaining a coarse structure

Labskaus is not a smooth mashed potato. Combine the potatoes and meat with the masher so that small pieces remain visible and the dish retains bite.

Variations

How to adapt this recipe

Simply omit matjes and serve pickled cucumber and fried egg as a sour and creamy accompaniment. The potato corned beef dish remains complete and balanced.

Cut an additional onion into thin rings, fry slowly until crispy and pour over the finished rennet house. To do this, reduce the onion slightly in the potato base.

Frequently asked questions

FAQ about Labskaus with fried egg

The North German basis consists of potatoes, cured beef or corned beef, onions and beetroot. Fried eggs, cucumber and fish are usually served with it.

Cooked, finely chopped cured meat is the obvious alternative. Normal minced meat significantly changes taste and consistency and does not result in a classic rennet house.

The colour comes from the beetroot and its juice. If you prefer a lighter result, add the beetroot in portions and serve the rest separately.

The potato-meat mass can be cooked one day before and warmed gently with a little stock. Add fried eggs and matjes fresh to serve.
