Why this recipe works
A whole pig fillet is lean and therefore forgives little overcooking. Remove the silver skin, flap the thin end below and tie it firmly if necessary. Thus the thickness is similar over the entire length and the narrow part does not dry out, while the middle still cooks.
Recipe
Pork fillet remains juicy in the air fryer when the evenly thick middle piece is cooked hot and removed at appropriate internal temperature.
Remove silver skin flat with a sharp knife. Undercut thin end and fix with kitchen yarn if necessary.
Mix oil, mustard, peppers, thyme, salt, pepper and garlic. Sprinkle fillets all around thinly with them.
Preheat air fryer for 4 minutes to 200 °C. Meanwhile, leave the meat at room temperature.
Place the fillet in the basket and cook for 5 minutes at 200 °C. Then turn.
Reduce the temperature to 180 °C and cook for another 11 to 15 minutes. Then start checking the internal temperature and remove the meat at 63 to 65 °C.
Let the pork fillet rest loosely for 7 minutes, remove yarn and cut across the fiber into approximately 2 cm thick medallions.
