Heaven and earth combines mashed potatoes from the earth with apple compote from the sky and serves with fried black pudding and roasted onions.

    Cooking potatoes

    Cook potatoes in salted water for 20 minutes until tender. Drain, leave to steam dry briefly and press through a potato ricer while still hot.

    Preparing apple compote

    Peel, core and dice apples. Cover with lemon juice, sugar and 50 ml water and simmer until soft for 12 to 15 minutes. Mash coarsely for some structure.

    Stir potato mash

    Stir in the hot milk and 30 g butter, season with salt and nutmeg and fold in the apple compote loosely so that the potato and apple remain partially visible.

    Brown onions slowly

    Fry the onion rings in 1 tbsp oil and 10 g butter over medium heat for 12 to 15 minutes until golden brown. Salt lightly and remove from the pan.

    Crispy roast black pudding

    Gently turn the slices of black pudding into flour and knock off the excess flour. Heat the remaining oil in the pan and fry the slices for 2 to 3 minutes on each side until crisp. Turn only once.

    Serve together

    Place the potato and apple mash on a warm plate. Arrange the black pudding and roasted onions on top, finish with black pepper and serve immediately.

Variations

How to adapt this recipe

If you don't like black pudding, serve coarse fried bratwurst to melt the potatoes and apples. The roasted onions remain unchanged.

Replace black pudding with 400 g of strongly fried herb side dishes or brown mushrooms and season the mushrooms with marjoram.
