Let brittle cool
The sugar coating sets only when cold. Do not put the hot mixture straight into the cold cream.
Oats caramelise with sugar and a little butter. Once cooled, they top layered quark cream and grapes.
Why this recipe works
Cold quark cream and raw grapes receive the fully cooled brittle only at serving time. The recipe makes four dessert servings without extra chilling.
Recipe
Cold quark and yogurt with fresh red grapes, topped with crunchy pan-made oat brittle.
Melt butter in a non-stick pan over medium heat. Add oats and sugar and heat, stirring constantly, for about 3 to 5 minutes until sugar melts and flakes turn lightly golden. Reduce heat if needed; do not let them darken.
Spread all the mixture thinly on baking paper and cool fully for about 10 minutes. This phase is included in preparation time. Break into small pieces. Meanwhile stir quark and yogurt until smooth.
Wash grapes thoroughly, drain and remove stalks. Weigh the edible amount and halve grapes lengthways. Keep all the juice that runs out.
Layer quark cream and all grapes with their juice in four dessert glasses. Divide fully cooled brittle evenly over them just before eating. Serve immediately. This makes four dessert servings without extra chilling or another topping.
