Use a suitable processor
The mixture is dense. Work in short pulses and follow the appliance manufacturer’s instructions. If needed process smaller batches, then knead together.
Dates soften in a little water. Chopped nuts and oats turn them into a mixture that holds its shape.
Why this recipe works
Ready-to-eat fine rolled oats and chopped walnuts add structure. Use all the soaking water. The balls can be served immediately. This makes twelve balls and six small snack portions without extra toppings.
Recipe
Small soft no-bake snack balls with dates, walnuts, rolled oats and unsweetened cocoa.
Chop dates and mix with all the warm water. Let soften about 10 minutes, included in preparation time. Do not drain any water.
Meanwhile finely chop walnuts and oats in a suitable food processor. Add cocoa and mix briefly. Small nut pieces may remain visible.
Add dates with all the soaking water. Pulse until the mixture comes together and can be shaped. Switch the appliance off before scraping the sides between pulses. The mixture should hold when pressed together.
Divide into 12 equal pieces and roll into balls with slightly damp hands. Serve immediately. This makes 6 small snack portions of 2 balls each. For later use, keep covered in the refrigerator; no extra chilling time is needed for immediate serving.
Kitchen know-how
The mixture is dense. Work in short pulses and follow the appliance manufacturer’s instructions. If needed process smaller batches, then knead together.
Divide the full mixture as evenly as possible before shaping. The portions will then match the calculated amount more closely.
