For this summer gnocchi salad, gnocchi are cooked or fried directly, mixed with cherry tomatoes, mini mozzarella, rocket, basil and a balsamic olive oil dressing.
Why this recipe works
Gnocchi salad should taste lukewarm or fresh when cooled. Fry the gnocchi briefly after cooking so that they are slightly crispy on the outside. The dressing is only added when the gnocchi are no longer hot, otherwise the rocket will collapse.
