Recipe
Mimista are tomatoes and peppers stuffed with rice, herbs and tomato flesh. They cook slowly in the oven with olive oil and potatoes.
Cut tomatoes and peppers open on top. Remove tomato pulp and chop, keep lid.
Mix rice with onion, garlic, herbs, tomato pulp, olive oil, salt, pepper and oregano.
Loosely fill vegetables to about three quarters so that the rice can swell. Put the lid on.
Place stuffed vegetables with potato wedges in a pan. Add tomato juice, olive oil and a little water.
Bake at 180 degrees for 70 to 80 minutes until vegetables are tender and rice is cooked.
