Biryani is not a normal rice pot. The rice is only about 70 percent pre-cooked, then layered with the aromatic base and steamed. Thus, the grains remain long, loose and fragrant.

Biryani

Biryani is layered with basmati rice, marinated meat or vegetables, spices, roasted onions and saffron. It is only pre-cooked and steamed.

    Prepare marinade

    Mix chicken or vegetables with yoghurt, garlic, ginger, biryani masala, salt, chilli and herbs.

    Prepare rice

    Cook basmati rice with cardamom, cinnamon, cloves and salt in plenty of water for about 6 minutes until it is 70 percent cooked. Drain.

    Base cooking

    Brown marinated chicken or vegetables in ghee or oil and cook almost until cooked.

    Layers

    Layer rice, roasted onions, mint, coriander and saffron milk on the base. Close the pot tightly.

    Steaming

    Steam biryani over low heat for 20 to 25 minutes, then leave to rest for 10 minutes and gently loosen.

Just pre-cook rice

Basmati rice must not be soft before layering, otherwise Biryani will become soggy.

Not stirring layers

After coating, the rice is steamed, not stirred, leaving the rice and flavours separate.
