Cut across the grain
Use thin rump strips suited to quick cooking. Tough stewing beef needs a different method.
Brown and remove the meat. Soften pumpkin in cooking juices, then return beef and cook through.
Why this recipe works
Slice quick-cooking rump across the grain. Pumpkin needs time under a lid; rice cooks alongside. This makes two main meals with all the rice included.
Recipe
Thin beef rump strips and tender Hokkaido pumpkin with parsley and white rice.
Boil rice with 240 ml water and 1 g salt. Cover and cook gently according to the packet about 12 to 15 minutes until tender, then rest off the heat covered about 5 minutes. Adjust water and time if needed.
Meanwhile dice pumpkin about 1.5 cm and chop onion. Pat meat dry and slice thinly across the grain. Heat oil in a wide pan and brown meat over high heat about 3 minutes, turning. Transfer to a clean plate.
Soften onion in the same pan about 2 minutes. Add pumpkin, remaining 140 ml water, remaining 2 g salt and pepper. Cover and cook gently about 10 to 12 minutes until tender. Add a little water if needed.
Return meat with its juices and heat through. Check thickest meat centres with a thermometer: at least 70 °C for 2 minutes. Cook longer if needed. Stir in lemon and chopped parsley. Serve with all the rice as two main meals.
