Cut through both skins
The cut must not only open the hard shell, but also the thin inner skin, so that steam can escape.
A strong cross section prevents uncontrolled bursting. After roasting, the chestnuts dampen in the cloth and remain peelable.
Why this recipe works
Before heating, chestnuts must always be cut deep into the skin and peel. If it is closed, steam could burst it. Peel chestnuts in proportion, while they are still warm; when cooling, the furry inner skin adheres significantly more firmly to the centre.
Recipe
Fresh chestnuts are cut in, watered briefly and roasted in the air fryer until peel and furry inner skin can be warm dissolved.
Remove chestnuts that show holes, mold or a rancid smell. Wash the rest of the chestnuts.
On the curved side of each chestnut with a small sharp knife put a clear cross cut through the shell and inner skin.
Place cut-in chestnuts in warm water for 15 minutes, then drain and pat on the surface dry.
Preheat air fryer to 180 °C. Roast chestnuts in a position 15 to 18 minutes and shake after 7 and 13 minutes.
Put hot chestnuts in a clean kitchen towel, beat them in and let them rest for 5 minutes.
Remove only a few chestnuts from the cloth and remove the peel and inner skin. Serve with butter, salt and rosemary as desired.
