The fillets are placed on a similar thickness, thinly oiled and strongly seasoned. After turning, the chicken breast cooks up to at least 72 °C internal temperature and rests before cutting.
Why this recipe works
Chicken breast dries out especially when thin ends have been cooked for a long time, while the thick middle still needs temperature. Evenly thick fillets, a preheated basket and a thermometer solve this problem. The specified time applies to fillets of about 160 to 180 grams.
Recipe
Juicy chicken breast with paprika, thyme and lemon, evenly cooked in the air fryer and tested for internal temperature instead of only according to colour.
Dip chicken breast dry. Gently knock very thick areas between baking paper on about 2.5 cm thick, so that all fillets cook evenly.
Mix oil with peppers, garlic powder, thyme, salt, pepper and half a teaspoon of finely rubbed lemon peel. Rub in fillets all around thinly.
Preheat the air fryer for 3 minutes to 190 °C. Place fillets in the basket at a distance; work in two portions with a small basket.
Cook chicken breast at 190 °C for 8 minutes. Open the basket and turn the fillets with a pliers.
Cook for another 5 to 10 minutes. From minute 13, measure at the thickest point and remove the fillets as soon as they reach at least 72 °C.
Leave the chicken breast to rest loosely covered for 5 minutes. Only then cut across to the fiber, drizzle with little lemon juice and serve with parsley.
