Why this recipe works

Red cabbage in a savoury noodle pan

Finely sliced red cabbage can be prepared without a long braise. Ginger, garlic and soy sauce flavour the brief pan cooking. The turkey strips finish cooking fully after the cabbage is tender. The dish makes two large main meals.

Recipe

Turkey and red cabbage with wholegrain noodles

Tender turkey strips, finely sliced red cabbage and wholegrain spaghetti with ginger, garlic and soy sauce.

Ingredients

2 servings

Method

  1. 1

    Prepare ingredients

Slice red cabbage very finely. Thinly slice onion and finely chop ginger and garlic. On a separate board cut turkey into strips about 1 cm thick; do not wash it. Afterwards clean hands and used utensils.

  2. 2

    Brown turkey

Heat half the oil in a large pan. Brown turkey strips over medium-high heat for about 4 minutes, turning. Transfer to a separate plate; the meat is not yet fully cooked.

  3. 3

    Cook red cabbage

Add remaining oil to the pan. Soften onion for 2 minutes, then briefly cook ginger and garlic. Add red cabbage and 150 ml water, cover and cook over low to medium heat for about 12 minutes until tender with a slight bite. Turn occasionally.

  4. 4

    Cook noodles alongside

While cabbage cooks, bring remaining 1500 ml water to a boil with salt. Cook wholegrain spaghetti according to the package for about 9 minutes until al dente and drain.

  5. 5

    Finish cooking and combine

Add turkey with its juices, soy sauce and pepper to cabbage. Heat thoroughly for about 5 minutes, turning. The centre of the thickest meat strips must reach at least 70 °C for 2 minutes; cook longer if necessary. Add noodles and lemon juice, mix thoroughly and serve hot immediately.

Tips for Turkey and red cabbage with wholegrain noodles

Slice cabbage thinly

Fine ribbons soften evenly in the brief pan cooking. Very thick strips need more time and possibly extra water.

Taste soy sauce before adding salt

Soy sauce already salts the dish. The measured salt is intended only for the noodle water.

Frequently asked questions

FAQ about Turkey and red cabbage with wholegrain noodles

Times and nutritional values refer to raw red cabbage. Jarred cabbage is already cooked and often seasoned with sugar and vinegar; it substantially changes texture and flavour and is not a direct substitute.

Cabbage needs a longer cooking stage. Browned turkey returns afterwards with the collected juices and finishes cooking fully, instead of frying throughout the cabbage cooking time.

The basic version contains no chilli. Ginger and black pepper add mild warmth, which also depends on the freshness of the ginger.

A food thermometer in the thickest meat strip is most reliable. Follow the core temperature and holding time stated in the step; colour alone is not reliable evidence.
