This Tom Yum soup is made as Tom Yum Goong with shrimp. The aromatic ingredients are drained in the broth, shrimp cook only briefly and lime juice is stirred only after cooking to keep the acidity fresh.
Why this recipe works

Recipe
Tom Yum soup is sharp and sour and clear: shrimp, mushrooms, lemongrass, galangale, kaffir lime leaves, chilli, lime and fish sauce give it the typical Thai flavour.
Simmer the lemongrass broth, galangale, kaffir lime leaves and chilli for 8 to 10 minutes.
Add mushrooms and simmer for 3 to 4 minutes.
Add the prawns and simmer for 2 to 3 minutes until they are pink and juicy.
Stir in the fish sauce, palm sugar and optional chilli paste. Remove from heat and add the lime juice.
Sprinkle with coriander and serve hot. Aromatic compounds can remain in the plate but are not eaten.
