Recipe
Soto Ayam is an Indonesian chicken soup with turmeric, lemongrass, kaffir lime leaves, glass noodles, egg, sprouts and lime.
Add the chicken with water or stock, lemongrass and lime leaves and cook gently.
Grate shallots, garlic, ginger or galangal and turmeric into a paste and fry in a little oil.
Add spice paste to the stock and simmer for a further 15 minutes. Remove the chicken and pluck.
Soak or cook the noodles, halve the eggs, prepare sprouts or cabbage and cut the limes.
Place the noodles, chicken, egg and vegetables in bowls. Add the hot stock and serve with the roasted onions and lime.
