Dry tofu before seasoning
Dry cubes take the thin seasoning better and brown more easily. Use firm plain tofu that does not fall apart when turned.
Pumpkin and firm tofu are cut into even cubes, coated with seasoning and roasted on a tray. Sesame is added near the end.
Why this recipe works
The edible Hokkaido skin stays on. Dry tofu well before seasoning and fold it in gently. Ginger, garlic and soy sauce add flavour without making a separate sauce. The dish makes two light vegan main meals.
Recipe
Tender Hokkaido pumpkin and golden tofu cubes with a thin soy and ginger coating and sesame toasted at the end.
Preheat oven to 200 °C conventional top and bottom heat. Wash pumpkin thoroughly and cut into cubes about 2 cm across. Press tofu dry well with kitchen paper and also cut into cubes about 2 cm across. Chop ginger and garlic very finely.
Stir together oil, soy sauce, lemon juice, ginger, garlic, sugar, salt and pepper. Gently toss pumpkin and tofu until all cubes have a thin coating.
Spread everything in a single layer on a large tray lined with baking paper. Roast on the middle shelf for about 25 minutes, turning gently halfway through. Pumpkin must be tender and tofu lightly coloured; roast longer if needed.
Scatter sesame evenly over cubes and roast for another 5 minutes without letting seeds darken. Divide pumpkin and tofu with clinging seasoning between plates and serve hot immediately. The quantities make two light main meals without an extra side.

Cubes should sit side by side. If the tray is small, divide between two trays and swap their positions during roasting.
