Sticky rice
Normal rice does not get really sticky. For mango sticky rice you need glutinous rice or Thai sticky rice.
For Mango Sticky Rice, sticky rice is soaked, steamed and mixed with coconut milk, sugar and salt while still warm. After a short rest period, the rice absorbs the coconut milk and is served with mango and coconut sauce.
Why this recipe works
Mango Sticky Rice works only with sticky rice, not with normal long grain rice. Steamed instead of cooked, the rice is then soaked in warm coconut milk. A pinch of salt is important because it balances the sweetness of mango and coconut milk.
Recipe
Mango Sticky Rice is a Thai dessert made from steamed sticky rice, sweetened coconut milk, ripe mango and slightly salty coconut sauce. The rice must be soaked first.
Wash sticky rice thoroughly and soak in water for at least 4 hours, preferably overnight.
Drain the rice and steam in a steamer for 25 to 30 minutes until the grains are soft and sticky.
Heat 300 ml coconut milk with sugar and salt until everything dissolves. Do not boil too much.
Mix the hot sticky rice with the sweetened coconut milk and leave covered for 15 minutes.
Thicken the remaining coconut milk with cornstarch. Serve rice with mango, add sauce and sprinkle with sesame or mung beans.
