Background Music and Food Choices: What a New Study Shows

A new cafeteria study links less arousing music with a slightly higher share of healthier food choices. We explain the findings, limitations and a practical self-test.

The study was published on September 10, 2026 as an audited, accepted manuscript in npj Science of Food. It can still be edited, the DOI remains.

Eight cafeteria days and 911 items sold

The research team played either less or more stimulating music in a university cafeteria in Macau on eight working days. Conditions changed over two weeks and were balanced after weekdays. The offer, the quantities and the positions of the food should remain the same. A total of 911 classified articles were included in the evaluation.

Under a predefined scheme, vegetable-rich dishes and grilled, baked or steamed fish and white meat without contrary indications were primarily classed as “healthy”. Fried foods and dishes containing beef, pork or processed meat were assigned to the other category. This research definition is practical for analysis, but coarser than a complete nutritional assessment.

Under less stimulating music 75 of 396 articles were classified as healthy, under more stimulating music 70 of 515. This corresponds to a difference of 5.35 percentage points. The reported effect strength Cramers V was 0.072 and was therefore small.

What the three scenario experiments complement

In Study 2a, 208 people looked at a healthy lunch menu and listened to 30 seconds of hip hop with low or high perceived stimulation. In Study 2b, 203 people went through a similar scenario with jazz. Study 3 included 357 people and added restaurant noise as well as a control condition without music.

In the scenarios, participants in less stimulating music reported a stronger intention to choose the healthy foods offered. The researchers investigated the perceived harmony or comprehensibility between music and menu as a mediating factor. This is a psychological self-information. It is not synonymous with actually eaten amounts, nutrient intake, weight change or a health benefit.

Why “calm” does not simply mean slow or quiet

The paper refers to musical arousal. The pieces were pretested for this quality. In the cafeteria trial, all tracks were in a major key and within a moderate tempo range of 72 to 94 beats per minute. The groups therefore differed in more than a simple label such as “ballad” or “dance”.

Volume, tempo, rhythm, timbre, familiarity and personal taste can influence how stimulating music works together. The study does not derive a universal list of suitable genres. It tested specific titles in a particular cultural context.

The main limits are set in the study itself.

  • Only eight field days: The cafeteria dates cover a short period of time.
  • No number of guests: anonymous sales of items were evaluated. Number of customers, repeated visits and dependencies within a group could not be modelled.
  • One location: The field trial took place in a single university cafeteria in Macau. The online samples also came from a Chinese cultural context.
  • Rough food classification: The scheme did not replace a complete nutritional evaluation of each meal.
  • Mostly intentions instead of behavior: Three of the four studies used presented situations and self-information.

In addition, the field trial did not capture the emotional value for all the music titles used. Authors therefore demand further studies that separate inspiration and mood more cleanly and include other countries as well as real restaurants.

A sensible self-test without health promises

If you want to explore your own dining environment, you can make a small, non-binding test out of it:

  1. Plan a familiar, balanced dish, such as a bowl, soup or vegetable pan.
  2. Eat on two comparable days once without music and once with a background music that is personally not as stimulating at a pleasant volume.
  3. Do not observe the weight, but the situation: Was the food pleasant? Did you perceive taste, hunger and satiety? Did the music disturb or help?
  4. Just keep in mind what supports calm and enjoyment. If you prefer to eat without sound, you don't have to add a playlist.

The German Society for Nutrition recommends that meals be served consciously and in peace. The Federal Centre for Nutrition advises to avoid distractions such as mobile phone or newspaper. These general recommendations do not confirm the specific music effect of the new study, but they are in line with the broader question of how attentive a meal is experienced.

The food remains more important than the soundtrack

Music does not automatically change ingredients or portion size. The greater influence remains which foods are available and prepared. A practical meal can combine vegetables, a filling base and a suitable protein component. Our vegetable recipes, pulse recipes and one-pot dishes offer ideas.

Even in restaurants, the design should not replace transparent labelling. A pleasant atmosphere can accompany decisions, but it does not provide information about ingredients, allergens or nutritional values.

Conclusion: Interesting environmental effect, no everyday rule yet

The new work combines a small field trial with three more controlled scenarios. The pattern is consistent: Less stimulating music was accompanied by more than healthy classified sales or stronger voting intentions. However, the real effect in the field was small and comes from just one cafeteria.

For home, the sensible message is not "quiet music makes you healthy." It says: The food environment deserves attention. If you eat with less stimuli more enjoyable and more conscious, you can create this environment – with music, if it helps, or in peace, if it suits you better.
