Don't overdo the cream
For gingerbread tiramisu: Stir the cream until smooth. Stirring too long can make mascarpone or cream granular.
In the gingerbread tiramisu, spicy gingerbread is mixed with coffee and cream. It should not be too sweet, because gingerbread and cocoa already have a lot of flavour.
Why this recipe works
Layer the gingerbread and cream not too dry, but not too wet either. After a few hours in the fridge, the layers will be soft and aromatic without spilling out.

Mix mascarpone, quark, sugar, cinnamon and a little orange grating until smooth.
Sprinkle the gingerbread pieces with coffee and place in a mould or glasses. Spread the cream on top and repeat.
Cover the dessert and refrigerate for at least 3 hours.
Just before serving, dust with cocoa and garnish with a little orange if desired.
