Roasted aromas
Fry the chicken or grill it before it is added to the sauce.
For chicken tikka masala, chicken is marinated in yoghurt, lemon juice, garlic, ginger and spices, then fried and finished in a masala sauce made from onions, tomatoes, garam masala and cream.
Why this recipe works
The difference to a simple curry is the tikka step: The chicken gets roasted flavours through marinade and strong frying. Only then does it get into the sauce. This makes the dish taste deeper and the meat remains juicy.
Recipe
Chicken tikka masala combines grilled or spicy fried marinated chicken with a strong tomato spice sauce and some cream or yoghurt.
Mix chicken with yoghurt, lemon juice, garlic, ginger, paprika or Kashmiri chilli, garam masala and salt.
Fry the chicken in a pan, oven or grill very hot until it gets roasted flavours. It does not have to be completely cooked.
Fry the onion in ghee or oil, add garlic and ginger. Stir in tomatoes and spices and let it boil down.
Add the chicken to the sauce and cook for 8 to 10 minutes. Stir in the cream or yoghurt and season to taste.
Serve with coriander and a little lemon juice. Rice or naan are good as a side dish.
Kitchen know-how
Fry the chicken or grill it before it is added to the sauce.
Do not stir yoghurt into a strong boiling sauce, otherwise it may flake.
Masala sauces work better if spices are measured before heating.
