Green beans, sweet tomatoes and salty feta make a satisfying summer salad. A mustard-herb dressing combines the vegetables without weighing them down.
Wash the beans, cut the ends off and halve very long ones. Put a bowl of cold water in the pan.
Boil plenty of salted water and cook the beans for 8 to 10 minutes depending on their thickness. They should be al dente but no longer raw. Drain and cool immediately.
Mix olive oil, red wine vinegar, mustard, honey and garlic. Season to taste with salt and pepper.
Drain the beans well and mix with two thirds of the dressing. Carefully fold in the tomatoes, onion and parsley.
Crumble feta over the salad, add the remaining dressing and leave to stand for 10 minutes at room temperature before serving.
