Mash potatoes by hand
A potato masher retains the rustic texture. Blending potatoes for too long with a stick blender can make them gluey.
Potatoes boil until tender and are roughly mashed with finely grated beetroot, milk and butter. Trout fries in a pan alongside.
Why this recipe works
Precooked beetroot keeps preparation manageable. Fine shreds combine with floury potatoes into a rustic side dish. The fish skin is patted dry before frying. The quantities make two complete fish meals.
Recipe
Pan-fried skin-on trout fillet with vivid pink potato mash made with precooked beetroot.
Cut potatoes into cubes about 2 cm. Finely grate beetroot. Check fish for bones, pat skin dry and divide into similarly thick serving pieces.
Bring potatoes to a boil with the water and two thirds of the salt. Cook over low heat for about 15 minutes until tender and drain. Add beetroot, milk and butter and heat thoroughly over low heat, stirring, for about 5 minutes. Roughly crush with a potato masher and stir in half the pepper.
While potatoes cook, heat oil in a large nonstick pan over medium heat. Season fish with remaining salt and pepper. Fry skin-side down for about 5 minutes, carefully turn and finish for about 3 minutes on the flesh side. The centre must reach at least 70 °C for 2 minutes; check with a thermometer if unsure and cook longer. Flesh should be opaque and separate easily into flakes.
Drizzle lemon juice over cooked fish. Divide hot beetroot potato mash between plates and serve immediately with trout. Small pieces may remain in the mash.

A dry surface fries more evenly. Initially leave fillets undisturbed on the skin side before turning.
