Cool the semolina before adding eggs
Stir eggs into lukewarm semolina so they distribute evenly without setting too soon. The preparation time includes this cooling phase.
Precooked milk semolina is combined with ground poppy seeds and bound with egg. Prune plum quarters cook on the surface, adding a fruity note to the warm bake.
Why this recipe works
This bake combines a creamy semolina base with juicy autumn fruit. The precooked semolina cools before eggs are stirred in, keeping the mixture even. In the oven it sets into a soft dessert. Freshly ground poppy seeds add fine dark specks and a nutty flavour.
Recipe
Creamy milk semolina with poppy seeds, egg and juicy prune plums bakes into a golden autumn dessert.
Bring milk, sugar and salt to a boil in a saucepan. Sprinkle in semolina and ground poppy seeds while stirring and simmer gently over low heat for 3 minutes. Transfer to a wide bowl and cool for about 15 minutes until only lukewarm. Stir occasionally.
Meanwhile, preheat the oven to 180 °C with conventional top and bottom heat. Butter a baking dish about 20 × 25 cm. Wash prune plums and cut into quarters.
Whisk eggs and stir them into the semolina only once it is lukewarm. Spread the mixture evenly in the dish and press prune plum quarters lightly into it with cut sides facing upwards.
Bake on the middle shelf for about 30 minutes until lightly golden and fully set in the centre. The egg mixture must reach at least 70 °C for 2 minutes inside; bake longer if needed.
Remove the dish using oven gloves. Let steam escape briefly, divide into portions with a large spoon and serve warm. The bake stays creamy inside.
