Why this recipe works
Seliodka pod Shuboi literally means herring under a fur coat. The salty fish lies beneath layers of potatoes, carrots, egg, mayonnaise and deep red beetroot. It is crucial to keep a low profile when using mayonnaise: thin lines connect the layers without covering vegetables and herring. After at least six hours of cooling, the salad can be cut cleanly and tastes more harmonious.
Recipe
Herring in fur coats layers salty matjes with onions, potatoes, carrots, egg, beetroot and thin mayonnaise layers to a Russian holiday salad.
Cook the potatoes and carrots in water until just tender. Cook the beetroot separately for 45 to 60 minutes or bake separately in foil at 200 ° C.
Steam the vegetables and refrigerate for at least 1 hour. Boil the eggs hard, refresh under cold water and cool.
Check the herring for bones and cut into 7 mm cubes. Let onion and lemon juice steep for 10 minutes and then drain.
Place a cake ring of about 22 cm on a plate. Distribute the herring and onion, roughly rub the potatoes over it and press them loosely.
Spray a fine grating of mayonnaise on the potatoes. Grate the carrots over them, pepper and again apply only a thin layer of mayonnaise.
Coarsely grate three eggs, cover thinly with mayonnaise and then spread the beetroot evenly over the rest. Spread the remaining mayonnaise very thinly.
Cover the salad and chill for at least 6 hours, preferably overnight. Remove the ring before serving and garnish with the remaining egg and dill.
