For this doner's dish, chicken or veal is marinated in yoghurt, spices, garlic and tomato paste and sautéed vigorously, with lettuce, red onion, tomatoes, cucumber and a simple sauce.
Why this recipe works
The most important step is the marinade: yoghurt makes the meat tender, paprika, cumin, garlic and tomato paste bring the typical flavour. It is fried in small portions over high heat to create roasted flavours. Fresh side dishes and sauce balance the flavour.
Recipe
A kebab plate succeeds at home with well-seasoned meat, hot pan, fresh salad, rice or flatbread and a garlic-yoghurt sauce. This makes it aromatic instead of dry.
Cut meat into thin strips. Mix with yoghurt, olive oil, tomato paste, garlic, paprika, cumin, oregano, salt and pepper. Let it stand for at least 30 minutes.
Prepare rice, French fries or flatbread. Cut lettuce, tomatoes, cucumber and red onion.
Mix yoghurt with lemon juice, garlic, salt, pepper and a little Pul Biber if desired.
Heat a pan very hot. Fry meat in portions for 4 to 5 minutes, so that toasted flavours develop and nothing waters.
Serve meat with side dish, salad and sauce. Serve immediately as long as the meat is hot and the side dishes are fresh.
