Keep butter cold
Soft butter connects the crumble topping to a closed layer. Cold cubes produce individual crispy crumbs.
Some Cornflour binds the apple juice while cold butter forms coarse crumble topping. Almonds and oatmeal provide a crispy surface.
Why this recipe works
Apple varieties give off a different amount of juice. Therefore mix the pieces with little Cornflour and do not allow the baking form to become unnecessarily deep. For coarse crumble topping the butter must be cold and only briefly incorporated. Press a part of the mixture into small lumps to create fine and coarse crumble topping simultaneously.
