Why this recipe works
The air fryer does not completely replace the strong pan crust with frying potatoes, but delivers evenly browned slices with little oil. The decisive factor is a uniform thickness, a dry surface and enough space in the basket. Onions do not tolerate the full cooking time and are therefore only added in the second half.
Recipe
pan-fried potatoes from raw potatoes become golden brown in the air fryer all around when thin slices are watered, well dried and turned several times.
Wash or peel potatoes thoroughly and cut into even slices, about 4 mm thin.
Place slices in cold water for 15 minutes. Drain and pat completely dry between clean cloths.
Mix potatoes with oil, starch, marjoram, half of the salt and pepper. Halve onion and cut into thin strips.
Preheat air fryer to 200 °C. Fill potatoes as loosely as possible and cook for 12 minutes; shake vigorously after 6 minutes.
Mix the onion strips and cook for another 10 to 13 minutes. Turn every 4 minutes until the slices have brown edges.
Flavour frying potatoes immediately with remaining salt and parsley. Do not leave very soft slices in the hot basket any longer.
