Why this recipe works
Matcha becomes bitter and dull when the water boils or the powder remains unsifted. Sieve it into a bowl and beat it smooth with warm, non-boiling water. Ripe strawberries need only a little extra sweetness; lemon juice lifts their aroma. For visible layers, puree, then ice and milk are added to the glass, while the matcha is slowly poured in at the end.

Wash the strawberries briefly, pat dry thoroughly and remove the green. Halve very large fruits so that they are pureed evenly.
Puree strawberries finely with sugar and lemon juice. To ensure a particularly smooth consistency, pass through a fine sieve; this step can be omitted for more fruit structure.
Put Matcha through a fine tea sieve into a matcha bowl or small bowl. Let water cool to 75 to 80 ° C; boiling water would make the tea unnecessarily bitter.
Add warm water to the Matcha and whisk with a bamboo whisk or a small milk foamer for 20 to 30 seconds until no lumps are visible and fine foam forms.
Divide the strawberry purée between two glasses. Carefully add ice cubes and cold milk, then slowly pour the Matcha over the back of a spoon. Stir before drinking.
