Satay with peanut sauce is made up of marinated chicken skewers grilled or pan-fried, with a creamy sauce made from peanuts, coconut milk, curry and lime.
Place the skewers in water for 20 minutes so that they do not darken too quickly when frying or grilling.
Mix chicken strips with coconut milk, curry paste or curry powder, turmeric, garlic, fish sauce and sugar. Let stand for at least 30 minutes.
Heat the peanut butter with coconut milk, red curry paste, lime juice or tamarind, sugar and a little fish sauce until creamy.
Place the chicken on skewers and cook in a grill pan, pan or on the grill for 3 to 4 minutes on each side.
Serve satay with peanut sauce, cucumber, lime and rice if desired.
