    Cool espresso

    Make the espresso, dissolve 10 g icing sugar in it and pour it into a cold container. Cool briefly in an ice water bath so that it does not melt the ice cubes immediately.

    Smooth mascarpone

    In a small bowl, whisk the mascarpone with the remaining 10 g icing sugar, vanilla paste and a tablespoon of cream until smooth. Do not beat for long to prevent it from becoming granular.

    Whip cream

    Gradually add the remaining cold cream to the mascarpone and whisk briefly with a hand blender until you have a soft, spoonable cream. It should not become as firm as a pie cream.

    Layering the latte

    Fill two tall glasses with ice cubes. Spread cold milk and slowly pour the cooled espresso over.

    Tiramisu finish

    Pour the mascarpone cream onto both glasses and dust with baking cocoa. If desired, make one spoonful of sponge and serve the tiramisu latte directly.
